Ingredients
- 4-5 Cups water
- 1/2 Cup Mirin
- 1/2 cup Soy Sause Kikkoman Shoyu
- 1/4 t Sake Cooking Variety
- 1/2 medium onion cut into 2" pieces
- 1 Cup Shitake mushrooms cut into quarters
- 1/2 Medium prepared Lotus Flower Root 1/4" sliced and cut into quarters
- 1 medium Tomato cut in large peices
- Other vegetables or meat bok choy, broccoli, red or yellow peppers meats
- 4 servins Soba noodles or Udon noodles Udon is most common
- 3 each green onions chopped

Instructions
- Add all ingredients in a 5 quart sauce pan. Bring to a boil for 1 minute and let simmer. Do not boil too long. At the same time, prepare Udon or Sobe noodles in a separate sauce pan by cooking the noodles in boiling water for 7 minutes. Wash the noodles when they are done so they don't stick together. When the vegetables in the soup are softened slightly, the alcohol is cooked off, and the noodles are cooked; put the noodles in individual serving bowls and ladle the soup over them.
