Ingredients
- 5 eggs
- 1 medium onion chopped
- 1 /2 cup red bell pepper chopped
- 1/2 cup green bell pepper chopped
- 1/2 cup mushrooms chopped
- 4 T fresh cilantro chopped
- 1 t baking powder
- 1/4 cup milk
- 1 cup mozzarella cheese grated
- 1 t Garam Masala spice mix
- 1/2 t cumin
- 1/4 t coriandar

Instructions
- Preheat oven to 350*. In a dutch oven, on medium heat Saute onions, add bell peppers, then mushrooms. Add all spices. In a small bowl, whisk together: Eggs, milk and baking powder. Sprinkle fresh cilantro over sauted vegetables in Dutch oven, add whisked eggs then top with the grated Mozzarella cheese. Cover the dutch oven and put it in the oven to bake the fritata for 10 minutes or until the eggs are set. Serve hot.
